Dr. Jensen Part Two

Dr. Jensen used changes in diet as well as cleansing diets and fasting to help his patients heal.

He stated, “Make a habit of applying the following general diet regime to your every day living”: each day one should eat 2 different fruits, at least 4 - 6 vegetables, 1 protein and 1 starch, with fruit or vegetable juices in between meals.  Eat at least 2 green leafy vegetables / day.

Before breakfast:  upon rising take any natural unsweetened fruit juice,  one-half hour before breakfast. Between fruit juice and breakfast, dry skin brushing all over body (more detail on dry skin brushing later), 15 - 30 minutes of exercise that induces deep breathing, take a shower starting warm and ending cold enough to quicken your breath.

Breakfast: Stewed fruit, one starch and a health drink (vegetable broth, rejuvelac, buttermilk, oat straw tea, mint tea, vegetable juice),  OR   two fruits, one protein and a health drink.  Fruits can be sprinkled with ground nuts or nut butters. For proteins he recommended nuts, nut butters, cottage cheese, yogurt, eggs.  Recommend to change fruits,  proteins and starches daily and not to eat the same foods every morning.

Lunch:  raw salad, one starch (see below) and health drink with whole food cracker or whole grain bread or muffin.

                 Starch: Baked potato

                             Baked banana or plantain

                             Steamed brown  or wild rice

                             Cooked legumes

                             Baked or steamed winter squash

                             Baked yam or sweet potato

Steel cut oatmeal or barley or quinoa

                             Whole grain bread or Tofu

                             Cereals, whole grain and organic

Snack, afternoon:  fruit, fruit juice, vegetable juice.

Dinner:  small raw salad, two cooked vegetables, one protein, broth or health drink.

Cooked Vegetables:  Peas, artichokes, carrots, beets, turnips, parsnips, spinach, broccoli, string beans, sprouts, cabbage, swiss chard, egg plant, onions, cauliflower, zucchini , beet greens, summer squash, brussel sprouts, celery, etc.

Proteins:  nuts, seeds, tofu, all legumes, cottage cheese, yogurt, fish, lean meat, fowl, omelet once a week.

Broths:  broths should be made only from vegetable stock. They are alkalinizing (see earlier lecture on maintaining an alkaline diet and body), nutritious and full of necessary minerals.  Cut up assorted organic vegetables and place in a large cooking vessel, add just enough water to cover vegetables, cook over lowest heat for an hour.   Eat the cooked vegetables with the broth or strain and eat separately.   A little cream or butter or vegetable/herbal salt substitute may be added.  Do not add flour or thickener to broth.

Note: avocado is considered a fruit.

Never eat protein and starch together at the same meal (see earlier lecture on food combining to optimize digestion).

Fruit salads may be substituted for any lunch or dinner meal.  If you do not feel hungry or well a fruit salad is the best meal to have.

If not hungry do not eat until you are.  Do not eat beyond your needs.  Thoroughly chew your food.

“This is a healthy way to eat for the normal person.  You must live this way to be in good health.”  Bernard Jensen, DC
